Thawing Instructions

Your lobsters arrive frozen and if you wish to eat them at a later date, place them in the freezer until required. Caution: Do not allow partially defrosted or defrosted lobster to be re-frozen. Under an ideal frozen temperature of -26 to -30 degrees C (-15 to -20 degrees F) or below, frozen lobster can be stored with no quality loss for up to 12 months.

The ideal thawing time for the best taste and quality of frozen lobsters is 48 hours in the refrigerator. If you need to thaw your lobsters quicker than this you can thaw them in the refrigerator for 24 hours, however you will need to double the steam time to 6.5 minutes.

Do Not thaw frozen lobster meat in warm water or at room temperature. This causes a loss in taste and texture.

Once thawed frozen lobster has a 4 day refigerated shelf life, however they are best consumed within 24 hours of thawing.

After the thawing process is complete remove the mesh bags and claw bands from your lobsters before reheating.

Reheating Instructions


Step 1) Bring 1-2 inches of water to the boil in a lobster steamer or a wide pot with a steamer insert in the pot.

Step 2) Set the lobsters in the pot and reheat for 3.5 minutes if thawed for 48 hours and 6.5 minutes if they have been thawed for 24 hours.

Step 3) Remove the lobsters and serve hot or let stand for 5 minutes and serve.
